A wonderful and talented friend of mine, Katya Grineva, plays concert piano every year at Carnegie Hall in New York.  Her next concert in 2002 will be on Friday, May 3.  When she has off from her touring schedule, she stays at our home in Tuxedo Park and practices entire concerts on our old 1929 Steinway.  The music resounds through the house and it always inspires me to create yet another delicious dish in the kitchen.  We thought we would combine our talents to offer “Cooking in Concert” to local residents who would like to bring music and the best food to their guests.

FIRST COURSE

  • Fresh Coconut Shrimp with Apricot-Horseradish Sauce

  • Florida Crab Cakes with Sunshine Aioli

  • Seared Tangerine Tuna with toasted black & white sesame seeds

  • Tuna “Roses” with Aioli and Capers on Potato Latkes

  • Grilled Swordfish Bites with fried garlic sauce

  • Grilled Baby Lamb Chops Hears of Palm Fingers (or steamed asparagus) wrapped in proscuitto with honey/mustard dip

  • Spicy Shrimp with Roquefort Sauce  

  • Smoked Fish Cip on Bread Rounds

  • Herbed Mushroom tartlettes


MAIN COURSE

  • Marinated or steamed vegetable plate of the day with quinoa or brown rice
  • Crab-stuffed Calamari with fresh tomato coulis
  • Lobster-stuffed filet mignon with cognac sauce
  • Asian grilled Shrimp with “Forbidden Rice” (black rice served only to the Emperor)
  • Whole Roasted “Thai” Duck with wild rice pilaf
  • Hazelnut-crusted Roasted Pork Loin with Mango Chutney
  • Perfectly Roasted Free-range Chicken, pheasants, squabs or quail


ACCOMPANIMENTS

  • Melange of Roasted Root Vegetables
  • Sweet Potato & Carrot Puree
  • Potato & Leek Galette
  • Asparagus with fresh herbs & Parmesan Cheese
  • Brussel sprouts with butter & toasted almonds
  • Classic Ceasar with Parmesan curls & homemade croutons
  • Salade Compose: Tender Boston lettuce with steamed green beans, argula, fennel & red cabbage in a lemon vinaigrette
  • Anchoiade with fresh vegetables: masses of crisp, colorful julienned vegetables tossed with fresh (but light) anchovy/mustard dressing


BREADS

  • Choice of Whole Wheat Butterhorns with hazelnuts,
  • Rich Hot Potato rolls,
  • Rye, Onion or Tomato Rolls
  • Homemade soft or crisp breadsticks
  • Artisian Breads and Rolls

TO FINISH

Individual or large cakes are available in the following manner:

  • Chocolate Souffle Cake with chocolate ganache and fresh fruit
